Call me a n00b, but will 17x7.5 inch wheels work with 215's for the tires?

215 will work fine. I have Fikse Fm/10s for my 95 that are 7.5 up front and 8.5 in the rear, and I'm going with 215/45-17 and 245/40-17 which should hopefully fit nice and flush, and also maintain the same overall diameter as the 205/55-16s that are on there now.

I suggest you get a 225/40/17 or 225/45/17. A 7.5" wheel is very capable of supporting a tire that wide...so use that width and increase your contact patch.

running a 215 in comparison to a 225 might give a small advantage of sidewall stiffness.... as the sidewall will lean "in" a bit in comparison to the 225....

I think any difference in sidewall flex would be negligible compared to the difference in contact patch between the two tires. My 225's, for all practical purposes, are pretty much verticle on my 7.5's. A good stiff-walled performance tire will make better use of contact patch than just slightly more sidewall support.

i'm confused, i have a s13 to, i've been told i can tuck up to 17x10's on a s13, i have 18x7's right now and that looks like to would just barely tuck. can your 7.5's tuck

I've never seen or heard of 10's on an S13. 9's are pretty much max with the right offset...and that's just for the rear. If by "tuck" you mean do they fit in the fenders?, then yes. I plan to go to 8's all around sometime in the distant future.
