When you watch the driver in these videos you will see them tapping the brake pedal a few times when they are not braking. What is up with this?

Yeah, could very likely be trying to load up the front of the car a little bit.
Also, it might be a "sanity check" or if the track is wet they could be cleaning the rotors. My 240SX never really had a problem with it, but my old VW GTI, whenever it rained really hard, the brakes would build up a thin film of water while driving at speed that I needed to "wipe off" with a tap of the brakes.

Pad knockback
in a turn the clearances between caliper, rotor, hat and all the other items on the knuckle allow the rotor to push the pistons back into the caliper slightly. Next time you get on the brakes the 1st (2nd or 3rd) pedal push is spent moving the pistons closer to the rotor and not braking like you wanted to.
You can google it for diagrams and stuff if you want. I have not had a problem with it on the 240, but if you ran race tires it might be a problem possibly. I don't know.

or it could be they are making sure they have pressure in the lines. a couple of pumps while your driving ensures that brakes are gonna be there when you actually NEED to use them. better to find out on the straight than when you need to be breaking for that hairpin.

That's the main reason I recall from watching races on tv and what commentators say.
