Well, we need some more info. What did you check? Is the belt still even on the power steering pump? Sounds like it went neglected and finally just gave out. How about fluid level/condition, when is the last time you changed it? Remember to use automatic trnas fluid. Could also be the pump itself, but try the belt and fluids first. And, no, it's not simple to just delete your power steering. And yes it's simple to remove the power steering, but why? Just fix it and enjoy one handed steering, it's not that complicated. The system itself is rather simple and easy to figure out. Not many parts to a power steering system, pump, steering rack, resevoir, cooler and a sensor that tells the car to idle up when your at full lock so it doesn't die. Get to it.

Try bleeding it? Maybe a small leak? Maybe a clog?

Dude ur belt is toast, this is normal as they stretch and deteriorate over time. If your waiting til they start screeching then you know its time for a new one.
some times they are so far stretched that even if the tensioner is maxed out its still floppy. Buy a new belt and be happy
