Driving my car without the hood on, and when you get into the throttle there was fluid spraying onto the right side of the windshield.
I put a rag around the cap to see if it would be wet after a drive and now it started overheating but the rag wasn't wet.
My oil would be milky if it was getting fluid in there right?

Did you not check for any other leaks? I would check your heater hoses, the on the on the right side, along with the TB connections, or anywhere under the intake manifold really.
Just start it up and check for leaks as it idles, make sure you let the thermostat open to pressurize the system before you think there are no leaks.
Simple stuff, just look around.
And yes, the oil would be milky with water in it.

I've checked at idle after having it warmed up numerous times and it doesn't ever leak until on the throttle for a few seconds or more.
The oil is not milky and there's no condensation or smoke coming out of the exhaust.

Heater hose, or radiator hose it sounds like.
And it sounds like your headgasket's on it's way out (that's why it's load dependent).
Just my educated guess, from thousands of miles away.

What I originally thought was the radiator hose or cap was leaking and once it loses so much fluid it stops circulating and then begins to overheat.
