350z rotor/pads/&calipers on s13

Could a 350z full brake hub setup be compatible with a simple s13 after a 5 lug conversion? Or what's the route to go after a conversion.

Yes.
You just have to drill the mounting holes on the spindles to 14mm.

Fronts bolt up by drilling the knuckle.
The 350z rear calipers' mounting points are spaced further apart than the stock 240sx/300zx calipers.

So 300zx calipers and rotors would be a better fit than 350z?

For an easier and more "bolt-on" like install, the 300zx brakes are better for that, yes.
