I'm just about to go pick up some JDM Enkei RP-01 16" rim. The size are 16x7J+35 114.3 4 lug and 16x8+38 114.3. I just need to make sure the +35 will clear the 300zx calipers. Thanks guys!

The offset doest really matter. I mean it does, but 90% of the clear or not clear factor is spoke design. My TE37's with +35 didnt clear z brakes. If its close you can shave down the Nissan lettering or get a spacer.

on that wheel the offset is kindof important since that is one of thoes wheels that (i think) changes offset based on the thickness of the mounting pad, like FNs. so the lower the offset the more clearance you gain because they never change the lip depth/face design until you get to 10j. id say they have a decent chance of clearing but its a total guess, just going off pics of the wheels. if they dont you can just grab some cheap ass spacers.

I had a set of RP-01s-17x7.5 +32. You're right, they change the mounting pad to change offset, but my wheels cleared 30mm Aluminum Z Brakes. Hope that helps.
