Turns out my car was tuned on a low fuel pressure, and is now rich with the pressure up to where it should be.
Is correcting the tune at this point something that would be an easy enough job that I could do it with no prior experience in a timely manner by just researching / playing with it, or is the risk too high?

Uhuhuhhhuh ya play with it until it goes bang, then you'll know if it's tuned correctly or not

It is easy enough provided you know what to do and have the right tools for that. If you did, you would not be asking, so go back to the pressure the car was tuned for and call it a day, or get a new tune.
