Soooooo,
How important is it really to keep the rocker arms and shims paired up and replaced in the exact same spot when swapping head parts?????

It's pretty important as you want both valves to open the same height.
Those shim also prevent premature wear on the camshaft lobe and rocker arms.
Finally, it could create some vibration that could results in a broken rocker arm if it decide to leave it's place and get inside the valve spring...

Well its kinda too late now to keep them together so Im just trying to figure out all my options. I do not want to buy solid lifters and all that. I was thinking maby I can just try to measure them all up and pair them as best I can.?.

it honestly depends on what mods you did. If you did solid lifters it is VERY important that you shim them correctly. if you keep stock lifters it is not nearly as important since they are hydraulic and adjust/conform to the situation they are in. There are limits, if you are running stock lifters then and can feel the rockers wobbling on its three contact point then rearrange your shims so that they are more equal. you shouldn't really have a problem since the factory shims are almost all 3mm think.
