Hi so basic info just recently put back together my sr with head gasket, new cams, turbo, fmic, and exhaust. when i finished everything ran fine and idled fine. now unfortunately i forgot one clamp on my radiator hose so after about 30 mins i find my car smoking riding down the road badly. easy fix no problem clamp it up and shes good, or so i thought. obviously some water damage occurred pretty much everywhere, and when i start up the car its rather rough and will not idle unless i apply gas consistently. another interesting tidbit is that it will rev up on its own it seems, not sure if this is due to me pumping the gas and its burning it off causing revs or what. so far i have changed the alternator which had most water damage and have a cas sensor coming in, reason for cas is that the case is broken right on the top and i have a big hole and i believe water went into it. thats my main thought as of now is the cas and just not having good readings on timing. ANY insight on what else might be the problem would be greatly appreciated. thanks

could be a vaccum line that blew. check your vaccum lines and tb. also your tps.

Could simply be air in the cooling system. If air gets stuck in the IACV, it'll idle all funky, stall, hunt around rpm wise. Bleed your cooling system well, and see if the problem persists.
