Figured it was the IACV so I replaced it and it semi-fixed the problem. Now it holds 1k but drops down almost till it stalls every couple of minutes. Better than every second or two but still not completely resolved.

Making me insane.

You have to do the idle/ timing reset procedure when you replace an IACV. Do a search for "timing mode" on the forums. Also more than likely you have a large intake leak somewhere, more fuel is being pumped in due to the lower manifold vacuum and so it is stalling out due to that leak. I'd also check your coolant temp sensor, the red/blue rectangle one, not the single wire one for the dash. A nissan "consult" (OBD) USB diagnostic tool works wonders for these type of issues. Shows whatever the ECU is seeing so you can pinpoint issues.

I appreciate you pointing me in the right direction. I actually had no idea that the car needs to be put into timing mode. I'll do that today. Thanks again.

its most likely the Maf that happened to me aswell it just died on me like that so i put my friends maf and it worked, you can test it by turning on the car and unplugging the harness to the MAF and if it stays on then thats your problem hope this helps
