I would go off metric

Plus the gaskets you will be ordering will be metric

go with Apexi if you're SR and use 87 mm bore at the largest if you're keeping stock SR bore

I stock the Us standard head gasket in 3.425 that you need for your build.

Its multi layer metal, real strong. The US standard in that size is pretty rare, they are about $330 each.
