Im trying to get my temp gauge working on my s13, its got an Sr swap'd into it. It currently has 2 electric fans on it, 1 that comes on when the car is turned on, and 1 that is turned by a separate toggle switch. Problem is since my temp gauge doesnt work I cant ever see how hot the car is actually getting. Where would one look to find it? The only place I can think of would be off the side of the engine where the exhaust manifold is, theres a water neck there for the coolant right below the CAS. There is a bolt in the only place it appears something could thread into it. Am I wrong in thinking this is where its supposed to be? Would I be better off just using an aftermarket water temp gauge in that location?

Yes, the stock sensor is not accurate.
The thermal transmitter is the 1pin prong under the intake manifold towards the front of the engine.

Oh ok, would the screw on the elbow thing be for bleeding the system then? Any suggestion as to where to put the temp sensor?

If it's the bolt pointing straight up, then yes. It's the bleeder bolt.
Any suggestion as to where to put the temp sensor?
I always put mine in the coolant passages in the head. That's where the most accurate reading is.
Other people put it in other places like the radiator hose and radiator.

I have the very first CS water outlet he ever made.
I still prefer water passages in the head though. It's the most accurate location.
I don't really care what water temp is elsewhere. The only location where water temp matter is in the head(s).
