8 more recipies and the book will be altered by 10%. thats enough to not get sued when i have it republished.
how do you feel about okonomiyaki? ive been making it alot lately cuz its cheap and i have all kinds of stuff to put in it.

However, when it comes to cooking that's not always the best route to go. Plus I have almost all those ingredients. So technically it would be smarter to just make it from scratch. ie dump ingredients into a bowl to combine.

Chicken cutlet, I like if done the german style (wienershnitzel). Chicken katsu, I could never get used to. Pork katsu, definetly!!! My fav is the katsu-don with egg, with that worsestershire gravy and mustard, or katsu covered with japanese curry.

Coco curry is awesome fast food curry. You get to choose how spicy it comes as well as the toppings. Last time I was there they had like a katsu trio of different cuts of pork. Awesome and SUPER cheap considering how much food you get. Makes me miss Japan. My wife makes a great katsu curry but sometimes sitting a bench and sweating over a spicy plate of coco curry is awesome.

I just googled Coco-ichiban and see what you mean. I get the impression its similar to the smallish curry chains we have here in socal, 'Hurry Curry' & 'Curry House' Yes, very fun food no doubt. Will have to try coco-ichiban next time I'm in Japan!

that's chasu (roast pork) ramen. tonkatsu is the fried pork. you got a great deal there, as most ramen places seem to rip you off with 2-3 pieces of pork and charge upwards of $5 for it. what you have there looks more appropriate! :D

Actually it is referred to as tonkotsu ramen (my favorite broth) which means it is a pork broth instead a miso or shoyu based broth. It does have a ton of chasu and it was around 900 yen if I recall correctly the last time I was in Japan.

Rad. My buddy brought back a takoyaki pan from his trip to Japan and we made a creation that ended up being delicious. We used pancake batter and dropped small pieces of cooked breakfast sausage in the batter. Cooked, given a dab of syrup... YUMMO!

ah, that's interesting! will have to do some research and hopefully find a place that does it here in los angeles. 900 yen is what, $8-10 or so? Not bad for the price.
ok, I may I have found a place that does it here in los angeles. According to the wiki def, the broth is based on pork bones. not sure if that's entirely accurate, but here goes;
Tonkotsu ("pork bone") ramen has usually a cloudy white colored broth. It is similar to the Chinese baitang (白湯) and is a thick broth made by boiling pork bones, fat, and collagen over high heat for hours on end, suffusing the broth with a hearty pork flavor and a creamy consistency that rivals milk or melted butter or gravy (depending on the shop). Most shops, but not all, blend this pork broth with a small amount of chicken and vegetable stock and/or soy sauce. Currently the latest trend in tonkotsu toppings is māyu (マー油), a blackish, aromatic oil made from charred crushed garlic. The noodles are thin and straight. It is a specialty of Kyūshū and is often served with beni shoga (pickled ginger).
I've actually been going to this place in down-town Los Angeles called 'Daikokuya' for ramen the last few yrs. I haven't been too diligent with my search of ramen, but this is my fav place in socal to date. Description isn't very detailed, but it does mention their broth is based on pork bones; Is it 'Tonkotso'? Only thing that sucks, is that they skimp on the chasu/roast pork slices.

Dood, one of the best one is literally a spit ball away from White Beach. Go out the base, make a right on Hwy 10 towards Ikei Island. Look for a family mart on your right and directly across it on your left is a King Tacos. That place is the bomb-diggidy...2 orders of Tacos, total of 8 pieces and im in fucking heaven. :bowdown:

This is Osaka style. I prefer Horishima style....which uses *trumpet fanfare* Yakisoba noodles :)

Speaking of Curry, I documented my Japanese curry making hotness. Heres a step by step with me in teh kitchen :)
3 chicken breasts diced

medium sweet onion (try not to use non sweet onions I think it overpowers the dish)

Heat up a big deep pot and throw in the chicken and taters cook the chicken until its white on the outside

when the chicken is white add the onions and pour enough water *about 4 cups* to cover the contents,

prepare your curry, cut it into cubes it will dissolve a bit faster

stir in the curry and bring the water to a simmer. The curry will thicken as it cooks. If its too thick add more water. stir frequently so the curry doesnt burn, do this for about 15 minutes

Get the rice started *I use 3 cups jasmine rice*

Drop in your mushrooms, carrots, and water chestnuts. Cook for another 5 minutes and keep stirring

The hardest part about curry is the water/curry ratio. If you are unsure its always best to start thick and water it down. If you have too much water you will ruin the curry >_<
