Mazda3s look good. My mate had a low trim level manual from like 2015 or so. What about something like a Civic Si? It's a manual and can still have four doors and is still fun to drive.
I'd peep Craigslist for a while and see if there is an older can that catches your eye. I think it's more cost effective to get a used car that you really like.
