Have a "Stock" SR (Front mount, exhaust, intake)

I want more.. possibly 1000cc+ injectors and some E85?

Is that possible on a JWT or RS Enthalpy tune? I'm in SoCal, there has to be someone local that can help me tune this greasy pig.

I would recommend searching the forum and reading the stickies. You will be amazed at how much this has been covered and how much info there is for you to dig through. Spend the time and read, it will only help ya in the end.
