When I got my Z32s done I gave it to them with no pistons, no rubber seals, and no bleeder screw. I don't know if it's an absolute necessity, but it's a much safer bet. It doesn't take much at all to disassemble or reassemble them, just compressed air and a block of wood to put in between the pistons so they don't smack into each other when you pop them out.

If they're in need of rebuilding or aged it doesn't hurt to go ahead and take them apart before coating. Otherwise the shop should have overlays to cover the entire area. They'll also put plugs in all the threaded holes to prevent them from being impacted.
