The alpha ratings (Z, R, S, etc.) are the speed ratings. They indicate the hightest speed that the tire has been tested to safely operate at:
N = 87 mph
P = 93
Q = 99
R = 106
S = 112
T = 118
U = 124
H = 130
V = 149
Z = 149+
W = 168
Y = 186
H-rated and above are considered high performance, sports car/sedan tires.
Toyo's are just high-performance racing tires that handle good as hell but tire wear sucks (or so I've heard). anyways, jmharr explained all that to you, so I guess I'll put in my fair share too. Lets say for example...you are running 275/35-18's. 275 is the width of the tire (Dont' remember if in cm or mm, pretty sure mm) anyways, that is your tire width. now 35 is the percentage of that width (275) that is your sidewall height. it seems like it nevers turns out correct for me so I won't mess with the numbers. and then the 18 means the size of your wheels/rim whatever. so there's my fair share of knowledge for the night...so I'm off to bed. I'm pretty sure all that info is right, someone correct me if I'm wrong.

yeah, sounds right. here's an example, the stock tire size for a 98 240sx SE is 205/55/16. Now if you want a wider tire size, you must keep the sidewall height the same so as not to fuck with the speedometer. So 55% of 205 is 112.75. For a wider size, you can go with 225/50 (50% of 225 is 112.5).
Just so everybody can get confused 'n stuff, the -55- in 205-55-16 (for example) is the aspect ratio. The aspect ratio is the height of the sidewall divided by the section width of the tire, *not* the tread width. The section width is the distance between the inner and outer sidewalls. This is less easy (impossible) to determine from the tire designation than is the tread width, which is pretty close, anyway, so all the tire-size formulae out there just use the tread width.
