what kind of kill switch are you trying to do? Like a battery kill switch, fuel cut off, starter kill, etc.
Are you going to be using it for security or a safety type thing

I'm going to do it for security and I thought you could do it to your ignition

Buy either a toggle switch or a rocker switch. That's all you need. And then wire it up to the fuel pump and hide the switch somewhere.
This is the one I used. Make sure you get more amperage than you need. I think 13A is good enough

My current 240sx was bought from a senior couple. They had installed a weird starter/ignition system where you have to insert a tiny small key in order to engage starter/ignition. Kinda neat. My previous 240sx had another weird starter/ignition system as well where there was a numeric keypad.

SPDT, DPDT, etc are just abbreviations for the number of poles and the throw. SPDT is single pole double throw, meaning that it has one pole and two different contacts (throws). Basically, a single pole, single throw switch is a basic on off switch, a single pole double throw is a switch that switches between output one and output two, and a double pole switch in either variety allows two circuits to use the same switch.
If you wire on the signal side of the fuel pump relay, your switch shouldn't see much current at all, maybe 1-3amps if that. If you wire on the pump side, you'll need to get a switch rated in excess of the fuse to the pump. (Fuse should burn out before the switch, lol)
Easiest way to do it is probably on the signal ground side, figure out what wire this is via FSM and put your switch in line with it. When the switch is open, the signal to trigger the fuel pump can't be sent since there's no ground, when the switch is closed, it'll act like normal.
If you're good, you can hack an OEM button and use this for your fuel pump switch. The rear defroster and headlight up/down buttons in the S13 are handy for this, I've used them for ground cuts before and they work just fine. The bonus is that they 1) look OEM and 2) aren't the first thing someone expects to be a cutoff switch. More often than not, people install standard switches within reach of the drivers seat, meaning that any thief that knows what they're doing will do a quick "feel" for the switch. Odds are, he'll fine the switch.

If they are really set on stealing your car, they will find a way no matter what.
The kill switch is just a deterent. It creates added time, that when a thief is stealing a car, they want the quickest get in and get out so they don't have time to mess around.
If you really want more added "visual" security, get a steering wheel club and take your shift knob with you as well hahah

taking the shift knob wont slow anyone down, not even on a visual note.
best thing you can do is get a removable steering wheel and take it with you - dont hang it on your rear view mirror like the ricer guys do.
if they really want your car, theyll just drag it away. all you can do is hope to slow them down a little.

Or create a custom shift lever where you have to stick it in and screw it. Thief would be like "where's the shift?" and does not have something to jam in and clutch it.
