Believe it or not I have two screws in which the head of it has been stripped on two of my four injector caps (which hold the injector in pace). How would be the best and efficient way of possibly tapping and removing something like this? I know it's a small screw to deal with, but I need to get them out due to me having to remove my injectors for the powdercoating of my intake mani.....any help would be great...

you can try and chisel it out... it'll take forever, but it'll come out.

They have tools to do these things. Check your local hardware store like a home depot, or sears. If that doesnt work try Snap on.
try this:

tap and die. find it at sears. might check to see if you need re-threading, may not though.

easy outs are similar to those craftsman tools. if the head is really stripped you might be able to drill it out a little and use the easy out. otherwise, you could drill the head off so you can get the injector cap off and then turn the shaft out with some vise grips. also, PB blaster is great stuff, that will help if the screw is siezed.

i got the craftsman one's. they worked great on stripped stuff. (lots of other mechanics works)
allot of times vice grips dont cut it.

Until you get a new oil pan, use some thread locker on the bolt and on the bottom of the bolt head where it meets the oil pan surface, use some solvent resistent liquid gasket...
This is only a bandaid, do not leave for an extended amount of time.
An alternative is to tap that sucker with a larger thread and purchase a similarly sized bolt.

Is there anything you can buy if the bolt breaks in the hole?

that's what easy outs are for. drill straight through the bolt as large as you can withough damaging the threads of whatever it is threaded into, then run the easy out in. they are basically lefthand thread screws, the threads cut into the old bolt and once it gets tight it starts to twist out the old bolt.
things to help this out, PB blaster, a blow torch. though the second one is not a good idea around the fuel injectors. heat up the outer part so it expands and breaks up the rust.

yep I went to sears and saw how expensive the drill out was so I just went back home... besides... these are just screws that have been sitting around for awhile... Now if you got a bolt thats stripped... then your screwed...

use a drill, punch the center of the bolt to center the drill and just drill out slightly smaller than the bolt diameter
usually it will crumble when the bit goes through and you can use a bit to clean out the rest of the hole. that works on open ended holes. If it is like in an engine block then you can drill it out and tap it or use a helacoil...
