Planning to hopefully fire my engine up and in the midst of things I realized hey I need to find out how much oil this pan takes. I've looked everywhere and I litteraly cannot find the capacity on any site. Was gonna call and ask them but of course they're closed today.
Does anyone know how much oil I should fill when using the circuitsports oil pan and a 300zx oil filter? Thanks.

Fill it with enough oil until it reaches the Full mark......

I have a Greddy oil pan and it takes a little more than 4 quarts. If I were you, I'd buy 5 quarts, fill up 4 full quarts, see where its at and then add a little from there, until you reach the desired level.
Also,

I just wasn't 100% sure if the dipstick still reads correctly with a different oil pan. Also to get the proper level you have to start it up first and I want to start it up and leave it running for a while before turning it back off as I want all my gaskets to settle in a hot engine so I wanted to make sure enough oil is in it.

This isn't a difficult concept to grasp. You fill it up until it reaches the full marker. Then you will start it up and let it run for however long your little heart desires. Turn car off, let the oil settle down, check the level, top it off accordingly. Tahhh dahhh! You've just graduated from Auto Mechanic Basics for Dummies 101. Congratulations.
