What's involved in converting to manual...obviously you'll have to drill for the clutch pedal etc...can someone give me a pretty in depth description of what has to be done to do this?

before you get blazenly ass raped for not searching, i'll give you an answer, because i am doing this swap currently
you need:
m/t driveshaft
clutch master cyl, and clutch pedal assembly
clutch hard line
clutch soft line
m/t crossmember
slave cyl (if sr didn't come with one)
remove all the auto tranny crap, drill hole for master cyl, install this with pedal, put the hard line in, soft line from hard line to slave cyl, bleed system, woohoo, you're done, there is some wiring crap to be done, but i dont' know about that yet, so i'm not going to try to describe the procedure

Dont forget the manual brake pedal, you can cut the auto one in half but thats ghetto. I rather have something looking normal.
Its easy to drill the clutch hole, the metal is thin enough to use a hole saw. I forget the size. I think its 1 1/4 or 1 1/2
You dont need the damper box, just bend the metal a line a little to connect the rubber line too.

after you replace the pedal you will understand why it is easier to just trim it with a cutoff wheel

omg, i actually removed the manual brake pedal from the parts car, and there is noooo way i'll ever get that thing into my project car

HELL yeah! i spent about 1 hour last night taking everything apart to try and get the brake pedal off.!! no luck. i too wanted to use the MT brake pedal to it will look nice; plus i had already spent the money for it. but it was way to much trouble.
