I need to securely put this (maybe more) 1" thick plate:

In here between the roll bars on the flat spot:

Having some trouble coming up with efficient, secure ways to mount this weight.

Square solid bar or tube bridging the roll bars, supporting the plate? Welded if it can stay, bolted to the bar/tube if it has to be removable.
What size is that plate? It looks like 12" x 18" maybe? Thats only a little over 62 lbs. I don't see the point of this.

if it`s for drag racing, NHRA requires at least 2 1/2 inch (12.7 mm) diameter bolts securing weights to the chassis of the car.

make some metal straps in an + pattern to bolt over it.

quit dicking with the plate and just get some race car lead bars. They already have mounting bosses in them.
