i'm making chili today. let's talk about chili. i'll post my ingredients as i go, and you guys can call me a pussy for not using habaneros, or tell me i should have diced up filet mignon instead of using ground beef or whatever. post your recipe, all that shit.

so here's where i'm at right now, just chopped everything up.

so far:



1 1/2 lb ground chuck
3 green peppers
2 red onions
4 tomatoes
1 jalepeno
2 anaheims
1 can kidney beans
2 cans black beans
1 can pinto beans
2 cups water
2 beef cubes

normally i do red and green peppers, but i had a bunch of green ones sitting around. going to let it simmer for two hours, then add spices and some canned chipotles, and then two more hours and we're good.

What spices are you adding?

I usually add:
Cayenne, paprika, chili powder, cumin, salt, pepper, white pepper, garlic, onion powder, Worcestershire sauce, etc etc etc.

And yeah, you're a pussy for not using Habeneros. :p

P.S. why are you adding the spices so late? I usually add the spices first and let the vegetables simmer in the spice mixture.

i've had a few bad experiences with slow cooker chili, and i've read that some spices change flavor/lose flavor if you cook them too long.

but yeah, just spiced up

added:

can o' chipotles
1/4 cup brown sugar
1/2 cup Maull's bbq sauce
1 tbsp cumin
1/2 tbsp garlic (yeah yeah fresh is better)
1 tbsp worcestershire
1 tbsp chili powder (MOM'S SECRET RECIPE BRO)
1 tbsp ground pepper
1/2 tbsp salt
1/2 tbsp crushed red pepper

awe yeeee

also, just noticed i do not own paprika. fuckin' spice collection is not complete >: (

Do you guys ever get the sensation, that when you look at something that seems to appear spicy, but tasty, your tongue waters and the taste buds on the back of your tongue tingle like when you eat something spicy?





Or am I just weird?

to me the only veggies in chili should be corn or hot peppers

i've never understood why only certain things can go in certain foods, why only certain engines can go in certain cars, only certain penises can go in certain races. you're missing out on some good shit bruh

but yeah "texas style" chili can be pretty good, too, i just like my fiber.

i take stagg chili, add spam, tofu, onion, beans, cooked bacon, cooked ham, and eat with sriracha and rice.

mmmmmmm ooooh soo good, but so fatty.

THis is exactly what I like to do as well. I add some spice to the beef as I brown it, but I make sure to get the veggies and the main soup simmering for a while before I even add thebeef. While many argue the beef/beef stock are the most important part, I do not agree...I think a strong veggie base is key.

Another thing I've also noticed:
While using Fresh veggies is best, I often like using some that are 'almost' on the verge of being bad...such as the stuff sitting in the crisper that you didn't use for any other food. In a chili (or in any other sort of soup/sauce/sloppy joe/etc etc crock pot,sauce pan stuff) I think it works best.

So with that said, if there are a ton of veggies that are just beginning to turn...maybe 1 day left in the fridge...they become soup or chili :D

PS: I like changing the beef up in it as well...or mixing it. Ground Beef, some Venison, and some pork sausage work well.
