So it's been 3 months or so since I've rebuilt the motor to stock specs. Ever since the first week of driving my water temp needle would go in an up and down motion, sort of like a boost gauge needle when hitting the gas. at times it may stay in one spot, and at times it would just stay all the way on the bottom in cold. Car does not overheat, however there seems to be a mini fluid leak somewhere which makes me have to refill the antifreeze a little every 3 weeks or so.

Would the leak be the problem because the pressure alters?

This happened to me for a bit. Whenever I would gun it, it would just drop low, and then go back up and do it erratically. Check the connection to your temp gauge sensor (the one wire). It's more than likely not making a good connection. If you're sure it is, you probably need to replace it with a new one.
