The 'full synthetic' Castrol that you can buy at Autozone, etc. is still based on a conventional oil base stock. This is a common trait to most of the mainstream synthetics (Pennzoil, Valvoline, etc).
Amsoil, Redline, and maaaybe Mobil 1 are based on a true synthetic stock. Castrol also has a REAL synth but it's ridiculously expensive (it's the factory fill in the BMW M5, I forget the brand name for it).
The main advantage of the 'real' synthetics is a bit of extra thermal capacity. Friction and wear levels should be about the same. If your oil temperatures stay pretty moderate, I wouldn't worry about them so much. If you have a turbo, worry about it :) and get the good stuff.

Coolant temps and oil temps can very widely. Oil temp is much more dependent on the oil system itself and how the engine's driven. That's one of the big reasons there are so many aftermarket high-capacity finned aluminum oil pans for the SR20DET. More oil can absorb more heat and the finned aluminum pan can dissipate it faster.
Track use = oil temps skyrocket.
Daily driving, don't worry about it so much.
