Hash brown casserole...

Dice up a russet potato, line a cast iron pan with oil and cook the potatoes to crispy, adding some diced onions just before done...
Dice up one smoked sausage or kielbasa (I use turkey, personally) and add it to the heating pan last, just long enough to get it in (it's already cooked).
Scramble 4 eggs and turn on the oven to 350°...
Put the potato/onion/meat mixture in a 12" square pan (I use a reassigned layer cake pan) and then pour the scrambled eggs into it, rocking the pan about to make sure complete coverage.
Sprinkle cheese of your choosing on top of this and place into oven until eggs are set and cheese is melted.
Serves 4.

I do it damn near every Saturday morning.

Meat used is a variable, but you know that there's a lot of stuff I do not eat.
What you do NOT change too drastically, though, is the potato used. Redskins won't do it right at all. The only other real option is a Yukon Gold.

My grandma makes these fat ass pancakes that are INSANELY good. I can only eat 2 cuz they're the size of a dinner plate and over a 1/2 inch thick. Only time i get them though is when i go to visit during christmas or thanksgiving.

On normal days though i just like a big ass bowl of oatmeal with honey, a banana, COLD cut up strawberries, 8 scrambled egg whites with cheese, and a huge glass of orange juice.

Plantain? Whats the diarrhea looking stuff?

Plantains are fruit that resemble bananas,
but have a much more subltle flavor.
It's commonly used as a starch/side in central american & caribbean cuisines.

The diahreah are (what I assume to be Salvadorean) style re-fried beans.

Salvadorean breakfast actually isn't too bad at all.
Maybe a bit starchy, but it's pretty delish.
I usually get a similar dish with less plantains, steak, & sausage.

for ppl in los angeles, i'd like to recommend this spot for Salvadorean breakfast.
was still good when i lasted visited approx a year ago

Regardless of how absolutely horrible it is for you, that is THE BEST fast food breakfast sandwich HANDS DOWN.

However, don't eat it before you have to do anything productive. Food coma within minutes.

Talk about bad for you... I have an energy drink, some starch (cereal, toast, bagel), and a banana almost every weekday. When I have a bigger breakfast and no Amp/Rockstar, the day draaaaaaaaaaaags until lunch, but with the energy drink I'm less hungry, happier to be at work, and before I know it it's lunch.

Scary shit.
