My setup consists of:

9:1 pistons(flat top)
1.1mm headgasket
and 260 cams with 12.0mm lift.

Bottom end is together, as well as the head. However, I have not put the head on the block yet.

I would like to know how much lift can be run before worrying about the pistons running into the valves?

Or is this based off timing....if the timing is right, I should not have to worry about the interference?

I would not worry about it.

Cam timing has something to do with it but. Theres know way for anyone to tell you exactly that your in the clear by what info you gave use. And also what esle has been done to the motor, i.e. the head been machined the blocks been decked you had the block line hone and so on. The best way to check is to put some clay or playdo on the top of the piston and to set the timimg where you want it. i would recommend stock till you know ur clearnece. Then torque the head on and turn the motor over with a half inch breaker bar on the crank nut if you hear any noise or if it gets hard to turn stop. Then take the head back off and look at the clay there should be an impresion of were the valve hit the clay then take a micrometer and measure it. That will give you a pretty good idea of what your workin with. im sure theres other way to do it but thats how we do it and we never have any problems.
