What causes the coolant guage to go down when i step on the gas...
But when im sitting at a dead stop it go back to where the temp would be at .. dunno if it the cluster or the sensor

could be both or the loose wiring

did you fill yur radiator all the way upcuz you might have a lil bit of air in the coolingsystem that could be one case but most likely

Mine was the same way.
Turned out to be loose wiring.

Check the wiring on both your sensors. You can even use an electrical cleaning spray. If it's not your wiring replace the sensor. More than likely that will fix it.

Solid engine mounts may do that too

Solid engine mounts may do that toomy car is stock as hell and i hate it.. lol
