jus had some and i have to say its damn good easily in my top 5 foods.
lots of hot sauce the brown sauce and the fish sauce and wala!!! awesome soup..
ive had Pho 88,75,76,67 and other numbers
also a place called Pho REAL it was pretty funny..
pretty good wit the chop stix to grabbin on da noodles
this stuff hits the spot especially now that its cold..
also if theres a couch near by im down for the count, it puts me too sleep for some reason..
anybody else likes it...

There's 2 Pho places that I used to go to alot. There's the one in Fairfield that i love cuz they also make fresh strawberry slushie with tapioca in it. Then there's the one in UCD thats really good too.

Yeah it is good for the cold weather.
I think good pho is based on good broth.
I don't think its the best soup-noodle dish ever, but it is surprising hard to get sick of.

If your dousing it with a crapload of sauce, it probably means the broth is no good, or you can't really appreciate the basic flavours of the broth. It's like dousing coffee with sugar & creamer. understandable if your drinking 7-11 coffee, but maybe not so much if its good stuff. personally I just like to throw in a few fresh green jalapenos and some mint leaves they give you. Stir it in, and eat immediately. Usually I have it with brisket instead of the sliced beef.

There are a lot of other fun Viet Dishes too. I love the lemon-grass pork chops, egg-loaf thingies, viet curries w/ baguette, and the the bahn xeo (sp?) crepes. 7 styles cooked beef is also interesting.

Out here in socal, i like the Golden Deli in SGV or Brodard in West-Minister.

you should check out the new-ish place in vacaville near carl's jr. and fitness 19. it's pretty good, i normally went to the one in fairfield but this is so much closer and is just as good. I just went there yesterday.... but now I want some more.

my gf's parents make insaneeeeee pho like off the charts...
i've had it at several restaurants, one called pho-natic and it doesn't come close to the home made.. just a bunch of hoisen sauce and hot chili sauce and squeeze in some fresh lime. I miss it so much, haven't had some in a while.
and viets are the pho masters, some laos people make pho but its not as good and they put too much stuff in it.

If your eating it without a heineken yer doin' it wrong.

I haven't had Pho in a long time.

My ex's parents used to tell me that the the best pho in the states doesn't even compare to the stuff they have in Viet.

basil is more common, but some places do offer mint (or at least its a spice that seems to resemble mint or spearmint). although I like basil in maybe other dishes, I don't put any or very little depending on the broth. most pho broth is already sweet. Cilantro can sometimes work very well, depending on your taste.

Playing with the spices/garnishes, and modifying the broth to a certain degree is part of the fun in eating pho.

when i go to my local pho spot, i always add a little bit of chunky sriracha, smooth sriracha, and oyster sauce. i'm straight off the pepper paste.

toss in some green shit a few bean sprouts and good to go!

LOL. It has like big pieces of pepper and pepper seed in it. Tastes a little differnt too. I don't think it's actually sriracha.

I had pho a couple days ago. This thread makes me want some right now. I know there are a couple 24 hour pho places around here, I think in Westminster? I had pho at 2 in the morning. Awesome. =)

Isn't there a place called What The Pho? lol.

the chunky one is the same thing as the smooth one except it has garlic and whole chili pepper seeds. they are both the same brand.

i use it mainly for cooking though.

Pho is the best after a hang over. All the noodles, MSG, and other ingredients in it really revives you back to life. Sriracha, hoisin, and fish sauce! I can eat pho everyday. Shit is bomb. I hear in Vietnam some joints even put doggie meat in it.

Vietnamese food is the fucking truth. I spent a week over there, and now that the company I work for is developing a few luxo resorts there, I'm probably going to be back soon for maybe a month. Vietnam and Cambodia are both amazing to visit.

I love pho, and when I do eat it, I have to have me a iced coffee to go with it. I add lemon juice, onions, bean sprouts, a shitload of basil, hoisin sauce, and half the bottle of cock sauce. I gotta ask for extra napkins, because the soup is so atomic!!! I always get the raw beef, with beef balls, and EXTRA tendons. I freakin love tendons. It's ironic that I saw this thread, because my mom is bringing home pho today!!! Being half Vietnamese, i've been eating pho all of my life. I love Vietnamese food in general, and it's something you just can't get tired of.

You guys are missing out. It's not for everyone, but if you like it, you end up LOVING it. On top of that, it's actually a healthy dish. It doesn't need MSG to taste good, so don't believe the hype. Had to post up pics of my dinner :p Second pic, is so you can compare the bowl height, to a pair of bamboo chopsticks. That's right bitches, this puts the airplane bowl of pho to shame!!! For those that don't know, the largest bowl served at a lot of these establishments, is called the airplane bowl.

Just finished eating pho at this restaurant called Ca Dao. Fast service and large servings for cheap. Right when you walk into the door they have a table for you and glasses of water ready to be served. Food comes out in less than 10 min. Freakin great.

the one i went to on bolsa was in the same shopping center as boiling crab and right across from lee's.

and yeah, healthy is not the word you describe that place when referring it to a friend/randoms.

its one of those old neighborhood joints where no matter what letter grade they get, people will still go and chow down.

There's a place I like to go to off Murrieta hot springs right by the 7-11 and they have good service. I know of a few others, one off Winchester near the bevmo and another off Los alamos near the sushi restaurant.

wow, haven't eaten this in years.

I actually don't care for the srichara or hoisin in pho.
If done right, the broth is the best part of pho but works on a more delicate level.
heavier sauces tend to overpower it.
now the herb blend, like basil, cilantro, mint (maybe) I think work well with it.

wish i was back in socal right now for pho w/ brisket
one of the best foods to have in chilly day imo.

Get a small dipping bowl on the side, mix in a quarter amount of Sriracha and 3/4 Hoisin, dip your meat in it. I should have gotten some yesterday when it was 40 degrees out...

I've had it with tripe several times but just can't get down with it.

Have tried it without sriracha to let more of the subtle flavors of the broth come through, but I love spicy food too much to do that regularly.

Saigon #1 on the corner of Newtown and Virginia Beach Blvd is the best I've had so far. Pho 78 was alright, but the broth at Saigon is much better. I've eaten at one other place I can't remember the name though, it also paled in comparison to Saigon.

I get the #80 there, its flank, tendon, tripe, and meat ball. I prefer adding basil, lime, sambal, and hoisin sauce, the soup is good enough to eat how it comes though.

If anything is legit ramen in the states, it would be that place. Buddy of mine in Japan sent me fresh ramen kit made by Ippudo and that shit is just as on point as the real shit. Just had to make my own cut up pork loin and fresh garlic. The box came with fresh ramen (not that hydrated shit), pickled veggies, dried seaweed, soup concentrate. Man, I want some now...if I wasnt so fucking far away from NYC, I'd drive my ass out there now.

Yah, not everybody will like tripe. Its definitely one of those acquired tastes thing.

But yah, we got Pho 78 this side of the peninsula and I found this lil hole in the wall place by James River Bridge called Jimmy's. Their broth may just be a tad bit better than Pho 78. No clue if Pho 78 makes the same exact brought between their 2 stores, I have never been to 2 pho place and have the same tasting broth. Its always different everywhere I go.

Umaido has everything you listed, spins their noodles fresh in the front window and $1 kaidama. I'm sure nothing beats JDM though. They also have chicken-only broth for us non pork eaters.

Nobody will care if you use a fork, most use chopsticks though.

I think most Pho newbies go for either the Pho Tai (rare steak) or Pho Ga (chicken). If you're more adventurous then get the tendon and tripe, really good stuff.

Pho aside, does anyone else here like Bun Bo Hue? Been eating a lot of Bun Bo Hue and Bun Rieu lately instead of my usual Pho.

I have some Pho questions. I have never ate pho and I was wondering if its bad etiquette to eat pho without chop sticks? I can use them but im not really good with them. Can you guys recommended me a pho dish to try? Thanks for your help. I have always wanted to try it out.

Lots of blanching and roasting of bones, just like making any other stock? This is why I don't make veal stock at home.

Totally worth the trouble. Especially when you can tweak it to what you like. It's great to make with friends, just make the stock and have a bunch of stuff on a platter for people to add to their soup!

It's totally acceptable to eat with a fork. If you use chopsticks the bamboo ones are best cause the noodles don't slip as much.

There was another question about what they put in the broth. It's usually and onion, ginger, star anise, cinnamon, coriander, and maybe a couple other things. Depends on who you talk to. Just make sure you roast the spices in an oven on Broil for a bit before you throw it in the pot. I've found it makes it taste much better. And the instant bullion sucks. I was lazy and tried one time and it just didn't have the hearty taste you want from a soup. Not the way to go.

EDIT: I forgot to ask! Where do you get tendon?! I've never looked but I miss it in my pho. I love tripe too and back home I used to get both at the local Asian Market. None of the ones here seem to have it, unless I'm just not recognizing it.

I've made pho at home before and used a pre-made soup mix concentrate. This one is pretty much on point honestly.

Buy some short ribs for more flavor, flank steak for the meat. Boil the meat in water to blanche it and get the fat out. Dump the water, throw in some fresh one and throw in the seasoning above. I like to use pressure cookers, 45 mins with it and the meat will be soft as heck.

Throw in some of these when you have serve the soup...

Banh Mi sometimes also has pate in it, which is great because it's very rich and balanced out by the pickled vegetables, etc.

Now I want one. Maybe I'll drive to Eden Center at lunch today and grab a couple.

It's just generally a product of the French colonial influence in Vietnam. The Banh Mi would not otherwise exist and the pork liver pate would surely not be an ingredient had the French not been there. Granted, the bread and pate and really all of it have changed over time, and change daily depending on where you're eating one.

Usually called Mi.

The broth is an onion and chicken based broth, vs the beef bone and onion based broth in Pho.

Mi = Egg noodles.

Hu Tieu = Rice noodles in chicken broth. Sometimes mixed with Mi.

Personally I prefer some types of Mi over Pho.

I have about 8 pounds of ox tails and beef feet (respectively) and I just saw this thread. I was going to use it for ossobuco and demi-glace/general stock but now I'm intrigued as I haven't had a bowl since NYE.

I'm an experienced grillardin, with a background as a Saucier so I had a class with a Vietnamese chef in culinary art school, however, all I could get out of her was... 'yes, I use ox tails, beef shanks, star anise, and cinnamon on a slow boil and occasionally skim.'

She wouldn't release more info, so I told her I was going to use kombu instead of cold water for my stock, thus creating a basic dashi for my stock for an 'extra' umami taste--mainly to throw her off into divulging more details, since with all the added ingredients even the most sensitive palate could hardly tell it was there. No dice.

I'm starting to believe Pho recipes are actually 20th century Soviet-KGB State Secrets or a map to buried French gold encoded in some vietcong dialect.

I suppose its like ramen stock, some people spend an entire lifetime refining it to their version of near perfection, so I can sympathize with their aloof nature, but its their version of a Swiss cartel; it seems like they're afraid of competition, and will use protectionist methods and a poor demeanor to fend off any potential onlookers.

I've seen the basic components on enough recipes, and even with them in mind and in my best attempts I only get to about ~80% satisfaction rate, which during a Norwegian winter I find its good enough. So, I guess this SoCal native is just going to have to come home, or ideally Vietnam, for a proper bowl of pho, huh?

I usually find this interesting because I have asked my friend's mom on how to make the broth and she gave me all the ingredients but not a how-to-guide. I think it's because they're used to keeping the family recipe within family. IIRC, you simmer and take out the excess fat but there's a certain temperature on how to do this.

God, I am craving pho now and places in San Diego sucks compared to the ones in San Jose...

Your post made me chuckle. Why? Despite what perceptions you may have that Pho recipies are akin to the closely guarded secrets of the Soviet era KGB (I'll ignore the obvious communism joke here har har), it really is that simple. Oh and onions. Lots of onions. Make it with love.

And yes the broth does take forever to make. It is that simple. Toast your spices, onion, and ginger before putting it in the broth.
