turn it a lot harder than you are, it's ok it wont break. just make sure you don't reinstall them like a dick hole and put some anti seize on the threads when re-inserting them. There is a tq value that they should be at, but I seriously hand tighten my plugs...
The head is made out of aluminum so if you strip one of those spark wells the head is damned near useless.

If the spark plug has been in there for a while, it may be kinda rusted. Spray some pb blaster down there to loosen the threads and then try again. Another bolt loosener that is better than pb is called kroil. It's hard to find around town but its great stuff.

In my experience, the best method to remove a stuck plug is to do the following:
1. rotate the engine 90 degrees (either with a socket or by cranking VERY briefly), thereby releasing pressure in the cylinder
2. heat up area in head-- aluminum expands a lot when heated
3. using a 3/8 drive ratchet, slowly apply torque until it breaks loose
4. if that does not work, use a breaker bar to gently apply torque again, and that should break it loose
5. if THAT doesn't do it, apply some WD40/liquid wrench, let it sit for 10 min, then try again
do NOT use an impact, it can very easily break off the head of the spark plug!

I can agree with the above a bit...
1. Make sure with another cylinder your stuck plug isn't on it's compression stroke.
2. Remove on a warm engine...don't tighten on one.
3a. At this point soak it in PB blaster / etc...someone more than likely overtorqued and/or forgot anti seize.
3b. skip the rachet...breaker bar gives a more positive feel and positive torque. I am constantly lending my breaker bar to those that swear they have tried everything.
also you can tear out threads removing a plug just as easily as installing one in an aluminum head. I have no experience in them, but there are thread repair kits for plug holes.
