Ive broken a few key bolts this winter with very little torque supplied.
Is it true bolts snap easier in freezing weather? Just snapped a manifold stud at 20lbs of torque

Yes thats true. Your stud was still weak to begin with though.

theres probably some validity in that, but with exhaust manifold studs its most likely due to the stud becoming brittle from heat cycling and stress. I highly recommend changing all the exhaust studs out for new ones if the head comes off.

Bang on.
If you live in a place that is subject to below freezing temperatures. Your bolts will go through a ton of stress from heating up and cooling down.
So if you're going to work on your car... It might be a good idea to do it inside where it's warm if you can. lol.
