I haven't been able to find a Sushi place in the US that matches even the mediocre Sushi places we have in Japan.

Favorite is actually sashimi (sushi without the rice). But as far as sushi goes, medium fatty tuna is my favorite for the price, but I could eat octopus every day and still enjoy it.

For "American Sushi" I like Spicy Tuna rolls.

There's a place call Mako sushi that I was recently introduce to.

The sashimi is awesome and even the sushi is great too.

Especially their salmon sushi. It's like butter.

It's on live oak in arcadia next to Irwindale speedway.

I went there three times in one week.

Expensive, but not super expensive plus its really worth it.

What is that? I recall having something like that in Kumamoto City some 10 yrs ago, or at least it looks like that, as recommended by a local. Unfortunately I forgot the name. Is it also slightly grilled before serving? Would be glad to rediscover that dish.

Thanks!

Anyone into Omakase? (sort of like a multi-course tasting dinner).
Only thing I don't care for the Omakases is that it's difficult to pair wine with it, and I don't care for sake.

Planning to try out this place called Urasawa soon.
Although not everything includes sashimi, it's a big part of their theme.
Here's a sample menu;

Taken from Urasawa Hiroyuki Beverly Hills Restaurant Features Gayot (http://www.gayot.com/restaurants/features/urasawa.html)

—Junsai (water shield) in sweet vinegar
—Chilled, fried Kyoto eggplant with sea urchin sauce
—Goma Tofu—Sesame-seed tofu with fresh wasabi and house-made tamari
—Egg custard with sea urchin, Japanese chive gelée, caviar and gold flake
—Sashimi of toro, Spanish mackerel and wild Japanese red snapper
—Yoromushi: red snapper, sea urchin, shiitake and shrimp with mountain potato and egg white
—Ishiyaki: toro cubes marinated in soy and sake, grilled on a hot rock with tosazu dipping sauce of soy, bonito, vinegar and sweet sake
—Kobe beef grilled over wood charcoal served with house-made seaweed salt
—Scallop and duck foie-gras shabu shabu

I was a Sushi chef for a year. Mighty fine for eating free :-). Also being in the midwest, its nice to now where the freshest fish is at. Its funny the reviews of some of the sushi places here get, they'd be surprised who actually has fresh fish and fake dyed fish. My cousins plans on opening their own place soon. Some of my favorites; Yellowtail with scallions, tuna mixed with sesame oil, sesame seeds, and onion in a gunkan style nigiri, nigiri eel(seriously, skin removed), and of course spicy tuna is awesome if made right. Wish i could get some toro around here.

wasabi my ass its green spicy crack, oh and a question for you sushi heads why do some sushi chefs put wasabi in your sushi and some dont??

Far as i know it, a preference in taste. When eating, some people may not use wasabi and just toss it into their mouth or with just a bunch of soy. It's a way to add it in. When i had time, making nigiri's. i would slightly smudge just a bit on the underside of the sashimi then place it on the rice. My co-worker added it into his single fish maki rolls all the time.

Though, some people just special ones. :fawkd:

^^^Good for you!

While I like stuff like California (or Ninjitsu, Tempura, Rock n Roll, etc) Roll, that stuff really shouldn't be confused with real nigiri sushi/sashimi.

The way I see it, there are 3 approaches to Sushi/Sashimi. The first is the more traditional approach. it's is based on the quality of the fish itself. It's very much no-nonsense. The flavor, texture, and freshness of the fish primarily carry the dish. If you're even more of a purist, imo you might even go exclusively with sashimi.

2nd approach is more creative, but is just as refined. Basically use of sushi/sashimi but with more use of creative sauces, or cooked in different ways. It's difficult for me to pinpoint this style other than the restaurant in Los Angeles that cook this way. Uraswa, I think does this. I believe a couple of places like Asenabo, Wa, and perhaps some others do this. At times, european cooking ingredients and/or methods might even be implemented. For instance, Asenabo makes a killer version of seared tuna (best in LA imo), While WA makes a version of Unagi based on the flavours of apple pie. It might sound eerie, but it's amazingly creative, if not also effective.

3rd is the places that specialize in cali rolls and the such is fun food. I think it would be a bit blasphemous to acknowlege it as proper sushi, because it really is not. I don't think I've seen that sort of thing outside of America. Regional bastardization of foods isn't always a bad thing (sometimes it is better than the original), but it shouldn't ever be considered the real deal either. If some of you really enjoy sushi, you ought to consider researching the more renowned authentic places in your area, have the chef choose for you, and go on from there.

A good, high quality sushi place might just use the first approach, or mix in the 1st & 2nd, but it would be rare to hear that they also have CA rolls and the like.

Katsuyas pretty decent. Their menu is creative, and some things work better than others. I think their Encino location is better than their Studio City though, mostly because the Studio City location has pretty bad service and very cramped seating.

If you're ever in the area again, give Asenabo a try. I think they even got awarded a Michelin star recently, although I wouldn't agree that they deserve it either as much as I enjoy their food.

\

I think the emphasis in Omakase is more sushi/sashimi, even though it might have a few cooked dishes.

Kaiseki can be a more formal tasting dinner like affair, or it can be as casual as a bento-box more or less (or maybe those aren't very good places, I'm not sure). In my experience, Kaiseki's emphasis is more on small cooked dishes, even though raw fish might be served as a starter. You might also get multiple dishes served all at once, while Omakase would serve every dish one by one.

If you live in Los Angeles, Omakase isn't difficult to find (there are many good places too), but a proper Kaiseki is not quite as common. Come to think of it, I don't recall ever having something like that in the US. The Otani hotel in Little Tokyo might offer this.

There is a spot in Rancho Cucamonga and Fontana now called Omakase Sushi, I think it's the best I've ever had personally. Great friendly staff in both locations, free paperviews for sports events and football.

I've had the following:
Shrimp Tempura Roll
Baked Salmon Roll
Baked Eel Special
Crunch Roll
Spider Roll with extra eel sauce
Dragon Roll
Marble Roll (fried lobster covered in spicy mustard and eel sauce)
Tuna Roll

Then there is Toro Sushi which is a cool place to hang out in Montclair California off of mountain ave by the 10 freeway.

Every thursday is college night or some madness so tons of happy hour drink specials the sushi is kind of expensive there, but they have a lot of neato dishes there. The Diablo roll is pretty weird, hard to describe but it was pretty hot LOL!

They have a rainbow roll that was pretty interesting, raw sushi in general is not my bag, I gotta have tempura. Otherwise I'll gag, I always think of that movie "ALIVE" where they started eating humans to stay alive lol.

well i went back to that all you can eat place again last night. and as if now my favorite is the Spicy Tuna HandRoll. Also since we come there a lot they showed us there gratitude by making us each rolls of items not on the AYCE Menu but ones off the main menu for free. one of them was the Viagra Roll.

Check this out. this is from last weekend after an event.

from another sushi place all the SouthSide Drifters local.

This place isnt the same as the All you can eat place.
