I'm gonna be going out to the junkyards and looking for some
junk'd 300zx calipers.
Is there anything I should be looking for to determine
if a caliper is healthy/useable or a safety hazard?
Should I even be considering used calipers?

obviously make sure there aren't any stripped threads on the fittings.
beyond that, it's hard to see potential problems with the caliper sitting in a junkyard. The bores could be scratched, but that's not likely if the caliper is complete.
when you get the calipers home, rebuild them... it's not too hard.
