I used to work at a meat packing plant (haha) and I got to go down to the kill floor a few times and see the slaughter and all that stuff, it was crazy.

This little dude in hockey goalie (sp?) gear would shoot the cows in the head with this bolt gun.

Then they'd fall down to a little ramp and get their hoofes chained to this conveyor belt type thing on the ceiling and would move around the rest of the plant to get butchered by each station.

Noteable stations:
Three dudes with big fuck off knives cutting the cows throat over water troughs full of blood (to drain the cows.)

After the skin was cut away from the hooves and horns, they stick a flap of skin into this machine that looks like the towel water squeezer things at car washes, then the machine would turn on and rip off the skin off. One of the most amazing things I've ever seen.

To gut the cows, this little dude with a big knife would jump up at the cow, stick it into its stomach then use his weight to pull the knife down and cut it open. Then the next little guy would reach in and pull all the shit out. Then the next guy would cut it all away.

and when I was a little kid like 6 my uncle had a pig give birth to a ton of pigs and there was this little runt he was just going to let it die, because they usually die, and thats kind of a waste of money , and he did not have the time to take care of just the one, so I bottle fed it and it became a pet of mine. I would go to his ranch every day for about 2 years and that runt turned into a 450 + pound pig, so one saturday walk out of the house to see a guy with a white coat on and a gun in hand and shoots my pig in the head, it than flops all over the place, under his truck, and all that shit, than he de hooves it, and skins it and butchers it right in front of me, kind of bothered me. than a week later, my uncle makes b.l.ts and as I am eatting them asks me how my pig tastes. not cool than, but funny as hell now.

Not much difference to me between elk and deer. Elk are larger so they have more meat/ bigger cuts. Both vary based on what they eat, and how they are field dressed. around here, they dont let em' bleed out much, so they are a bit more gamey.

Best thing about wild game: no steroids, antibiotics or bullshit added to their diets.
