OK i put a new fan on my girlfriends car lost a little bit of coolant from just the top hose filled it up with water drive it now the gauge cluster is says it cool then i drive then it'll heat overheating for like 5 sec. then go back to cool then 2 min later do it again. Any ideas? Not enough coolant to much water? Water pump and thermostat is like 5k old if that. Cant think of anything else let me know thanks.

Is the radiator clean?

Kognition's got the right idea, but you'll need to have the radiator checked for calcium deposits inside the radiator. You could have a partial blockage in the radiator causing the water pressure to fluctuate within the system. One way to test for it, is to warm the motor up & then run your hands quickly over the radiator fins & see if you can feel any variation in temperature. If the radiator was working fine, without any clogs, then you should feel the heat evenly distributed over the entire radiator. If you don't, then it's time to service the radiator. A chemical flush should help, provided it's not too clogged with calcium deposits. Hot water is extremely corrosive when under pressure. That's one of the main reasons why you should flush your radiator at least once a year. The chemicals in the radiator fluid break down under all that heat. Adding tap water to the radiator or overflow tank only makes it worse.
Anyhow, hope this helps....

well besides the lack of maintenance which is a possibility, you have the idea in reverse. adding MORE water vs coolant will drop your temps, not the other way around. as others said, when we say water, we do NOT mean tap water. if that is wat you've been doing, pat yourself on the back for slowly killing your radiator, and 'live and learn'. hehe. distilled water ONLY.

heating and cooling is typical of air in the coolant system.

You mean jack the front up and remove the cap
you want air to travel to the front Rad. not the back of the engine
