Im looking to purchase a block adapter (Tomei style) plate to run oil filter relocation/cooler lines, i had originally planned on buying an adapter to allow me to plug in the oil pressure sensor and the oil pressure gauge, but is it NECESSARY to have the oil pressure sensor or can i just remove it completely without any complaints from the ECU...?

The dash light will be constantly on unless you jump the wires or disable the light. ECU can car less.

Wrong on all accounts. The indicator light trips when the pressure sender goes to ground. With it unplugged, there is no ground, so no indicator. And since there is only a single wire there's nothing to jump anyway.
The ECU is not tied in to the pressure sender at all and has nothing to do with it.
So like I've said before and could have been found in a search, the OE sender is useless. Throw it away, keeping it will only assure an oil leak later on.
