I just got my first 95 SE 240 (I'm used to the B13 and B14 SER's) and I notice that the clutch pedal is very hard to press. It feels like one of those 6 puck racing clutches. Everything appears to be stock. The car goes in gear very smoothly with no problem. What could be causing the stiff clutch pedal?

Check the pedal assembly to make sure that the rod is going in straight. Sometimes on older cars the clutch pedal bracket breaks and that causes the rod to travel sideway and getting caught on things = stiff.

Well if the rod is straight...
you will never know unless you drop your tranny and look.
and... its the pressure plate that makes it feel stiff or not.
I have a 6 puck with a different brand pressure plate so its not too rough on my leg driving thru LA traffic.
