I am going to be putting together my oil cooler, remote filter setup and I had some ?'s about sealing fittings properly. I know that 37 degree AN fittings seal themselves, but what about the fittings going into my filter mount, and oil thermostat. -10 unions for the thermostat and 1/2NPT to -10 for the filter mount. Can I just use loctite for all those fittings?

Yea, for NPT fitting you should just put some thread sealer on it. I would rather use liquid thread sealer instead of loctite.

wasnt there JUST a thread about this a week or two ago? search, and you will find all the answers, i remember there being some really good info in that thread.
Use teflon tape on the NPT stuff - oil and high temps don't get along with liquid thread sealers over the long haul in my experience.
Don't use loctite.

I like silicone on any npt and oil connections. Oil actually eats away at teflon tape (and or makes it super brittle and into that hard brownish milky white crud)

neither does teflon tape and oil passages.
I use paste.

You're doing it wrong if you're getting pieces of teflon tape past the fitting. Teflon tape should start below the end of the threads(1-2 threads is a good amount).
I've never had teflon tape get eaten away either.
Silicone can work in some cases, but sometimes it gets pushed out of the threads enough to cause a small leak. It usually works though.
