It seems more as if the thermostat doesn't want to open

It could be your thermostat if installed incorrectly or it could be your radiator.
If you can make access for your hand to fit in between the gap you can feel the radiator and see if there are any cold spots.

Looks like thermostat stuck closed. Did you install the jiggle valve up?

yea, i would say to check the thermo with jiggle up like g6 said. If not, check to make sure there is not clog in radiator or in lower hose.

I appreciate the info guys,
System bled
the jiggle valve was up, but looked different/reversed on the new thermostat (autozone/duralast) compared to the old one it came with, not sure if that means something
We just ended up rechecking the thermostat to see if the jiggle valve was up and it was, we took out the thermostat for a temporary fix for a day or two (needed the car out & for school) until my buddy has more time to mess around with the car to try to figure out this thermostat madness, seems to be fine, just takes awhile to warm up, i'll be sure to check those lines when I can

Nothing to do with lines. If the car is fine without a thermostat, then you had an air pocket behind it. Reinstall and bleed until you're dead certain the system is full. It can take as long as a few hours.

could be a bad radiator cap also, ive seen cars boil over because of it not holding any pressure but if the bottom hose is staying cold its probably the thermo, boil it in a pot, see if it opens

Was it OEM parts you installed??? Or aftermarket? Aftermarket shit, and that's all it is, is SHIT, has a tendency not to work too well. Replace with OEM parts and you should be cool.
