I haven't eaten since Sunday, this thread has me craving a few things. Sometimes I don't eat for like two days, especially when I keep busy, because I usually don't eat out of hunger but out of boredom, or when I want or see something delicious.

I remember making a grilled cheese sandwich using a brown paper bag and my damn clothes IRON!!!
Anyways, hmm...chicken fettuccine sounds good. Get some chicken, grill it with some salt and pepper, cut it up, grill some mushrooms too and toss those into some alfredo sauce....YUuUUUm...

He was speaking with the accent and everything and trying to say the names of dishes in spanish but I think he was making shit up. man, it saddens me to hear what some of you people eat. you need to start eating better or you're gonna be getting stents at 37.
of course, I didn't eat all that well last night. My wife and I split some BBQ carryout, 1/2 slab of ribs, 1/2 chicken dinner with bbq beans, fries and corn bread. mmm, so tasty. We normally make dinner, but my wife had to be at work until almost 7, so carry out it was.
the night before: a tilpaia fillet with peas and wild rice.
for those of you living on your own and that don't know how to cook, a george foreman grill is a fantastic investment. real easy to make all sorts of things, from grilled sandwiches, to chicken, hamburgers, etc. It's real hard to screw it up since it cooks at a pretty low heat, and it cleans up very easily. I used mine all the time in college.
also, Olive Garden sucks. It's overpriced and they overcook the pasta, so it's all mushy. Pasta is not supposed to melt in your mouth.

last night it was pepperchini crawfish... start with some crawfish tails, sautee with pepperchini peppers, garlic, and real butter, make yourself some noodles of choice, we used linguine, after noodles are done combine, make yourself some good bread and a nice salad, for some reason i was in the mood for Feta cheese, so it was a balsamic vinagrette/feta/baby spinach salad last night... tonight, who knows.

This was the best part of the Super Bowl for me.
I drank 8 beers and made a bunch of good appetizers as a meal for my wife and I.
To start I made Jalapeno poppers. Made'em a lil different this time. Cut the Pneo in half, then put a string cheese stick in it, and wrapped it in Bacon! OH MY IT WAS GOOD!
Then we made little andouille sausages wrapped in phyllo dough.
We finished our feast off with wings with my homemade spicy garlic sauce.

Ok new OG recipe from me. Made this last night and let me tell you...mmm, mmmm, good, bitch!
Mel's/Exitspeed's Spicy Citrus and Garlic Shrimps (yes you have to say shrimps)
Raw Shrimps ( I only made 6 just for myself)
1/2 cup Orange Mango juice (I'm sure orange pinapple, or any combo like that will be fine)
2 Garlic Cloves (more to taste)
1 tble Spn WorcestershireSauce (SP)
1 tble Spn Butter
Splash Malt Vinegar
Salt & Cracked Pepper to taste
Crushed Red Pepper to taste
Combine all ingredients into a plastic baggie large enough to fit all the shrimps. The more red peppers you put in the better, at least to me. (I did about a half teaspoon and they were real nice and spicey) Add the shrimps and let marinade for 20-40 min.
Once shrimps have been marinated, heat an appropriate size skillet over medium-high heat. Add butter until melted, then pour out the shrimp into the pan with all the marinade. Shrimps cook quick and have a built in thermometer. They'll turn white and curl up. Don't overcook. Once shrimp are cooked remove them and then let marinade reduce down until thick it becomes a thick sauce, about 4 min. Pour sauce over shrimps and ENJOY with a Corona.

Since we had decent weather yesterday, i picked up 2 huge racks of ribs and a lot of chicken breasts. Threw them on the smoker, ribs slid off the bones they were so tender. God i love BBQ.

I'm making this tonight. Except I'm going to make it into a Po' Boy Samich. Basically get a nice sub type roll, then shred some fresh cabbage, and add some sliced pickles.

Mojito Chicken
Recipe courtesy Guy Fieri
1 (2 1/2 to 3-pound) chicken
2 tablespoons garlic powder
1 tablespoon onion powder
1/4 teaspoon ground cumin
1 tablespoon dried oregano
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
1 teaspoon paprika
Marinade, recipe follows
4 tablespoons extra-virgin olive oil
Mojito Glaze, recipe follows
Remove backbone of chicken with poultry shears; flatten chicken out by pressing firmly on skin part of chicken so it will sit evenly in a pan.
Preheat oven to 300 degrees F.
Combine all the dry spices and rub chicken with spice mixture, especially under the skin. Put into a resealable plastic bag and refrigerate for 30 minutes.
In a large mixing bowl combine all the ingredients for the marinade, then add chicken to marinade and refrigerate for at least 1 hour.
Remove chicken from marinade and shake off excess marinade. In a large saute pan over medium to high heat, add 4 tablespoons of extra- virgin olive oil. When oil is hot, place chicken skin side down and sear.
When skin is golden brown flip chicken and add 1/2 cup of marinade into pan; place pan in oven and cook the chicken for 25 minutes or until chicken has internal temperature of 165 degrees F. on an instant-read thermometer.
Remove the chicken from oven and brush with Mojito Glaze. Place chicken under broiler for 5 minutes. Remove from broiler, cut and serve immediately with more glaze on the side.
Marinade:
1 cup orange juice
2 limes, juiced
1/4 cup white wine vinegar
1/4 cup extra-virgin olive oil
1 tablespoon sliced garlic
1/4 cup dark rum
Combine all ingredients in mixing bowl.
Mojito Glaze:
1/2 cup dark rum
1/2 cup chicken broth
1 tablespoon brown sugar
3 tablespoons cold water
1 tablespoon cornstarch
1/4 cup chopped mint leaves
Salt and freshly ground black pepper
In medium sauce pot, place rum, chicken broth and brown sugar. Reduce by 1/3 over high heat. In a small mixing bowl, whisk together water and cornstarch. When rum mixture is reduced, add cornstarch mixture slowly to simmering liquid and whisk for 3 minutes, until 50 percent thicker. Keep in mind that you might not need all of it. When glaze is at desired thickness, add mint leaves and transfer to small bowl. Season with salt and pepper, to taste.

Tonight it's Salsa Chicken, which is something I made up and it's basically just what it sounds like. Chicken with salsa :eek:
2 pounds chicken breast, laid out in a casserole dish. Drizzle with olive oil and a few squirts of lime juice. Mix: cumin, garlic powder, turmeric, black pepper, cayenne pepper, dried cilantro, and seasoned salt (roughly equal amounts of each) Rub the mixture over the top of the chicken. Dump salsa all over the top, and put in the oven at 400* for a while (~45 minutes or so, I start checking it at around 35 to see if it's done). Sprinkle mexican cheese blend and crushed tortilla chips over the top ~10 minutes before you pull it out.
Tomorrow night: White chili in the slow cooker. 2 pounds chicken thighs, trimmed as well as you can. Throw in the slow cooker with 1 can white kidney beans, 1 large chopped onion, 1/4 green bell pepper, 1 small can green chiles, a couple of chopped celery stalks, a little chopped green onion, 2 fresh diced jalapenos, 2 cups of water, and 2 packets of McCormick's white chili mix (yes, I am a fucking cheater). Cook on low for ~10 hours. Should be tasty, methinks.

Chicken, Duck, and Smoked Sausage Gumbo
Recipe courtesy Emeril Lagasse, 2005
Show: Emeril Live
Episode: Gumbo 101
2 tablespoons vegetable oil
2 duck leg quarters, cut in 1/2
Salt
Freshly ground black pepper
2 cups Dark Brown Roux, see How To Roux, recipe follows
2 cups chopped onions
1 cup chopped celery
1 cup chopped bell peppers
2 pounds smoked sausage, such as andouille or kiebasa, cut crosswise into 1/2-inch slices, browned in a skillet, and drained on paper towels.
2 1/2 teaspoons salt
1/4 teaspoon cayenne
3 bay leaves
10 cups chicken stock
3 pounds boneless chicken meat, cut into 1-inch chunks
2 teaspoons Emeril's Bayou Blast, recipe follows
2 tablespoons chopped fresh parsley leaves
1/2 cup chopped green onion tops
Steamed White Rice, for serving
Hot Sauce, for serving
Heat the vegetable oil in a large Dutch oven or stockpot over medium-high heat. Lightly season the duck legs with salt and pepper. Cook the duck legs in the hot oil until well browned, 4 to 5 minutes per side. Remove from the stockpot and set aside to drain on paper towels.
Place the roux in the Dutch oven or stockpot over medium-high heat. When the roux is hot, add the onions, celery, and bell peppers and cook, stirring constantly for 4 to 5 minutes, or until wilted. Add the browned duck legs, sausage, salt, cayenne, and bay leaves. Continue to cook, stirring, for 3 to 4 minutes. Add the stock in a slow stream, whisking until incorporated.
Bring to a boil, reduce heat to medium-low, and cook, uncovered, stirring occasionally, for 45 minutes. Skim off any fat that rises to the surface. Season the chicken with the Bayou Blast and add to the pot. Return the gumbo to a simmer and cook an additional 45 minutes. Remove from the heat. Stir in the parsley and green onions. Remove the bay leaves and serve in warmed bowls with steamed white rice. Pass hot sauce at the table, if desired.
How to Roux:
3 cups vegetable oil
5 cups all-purpose flour
Place a heavy, iron Dutch oven, (or iron skillet with deep sides) over medium heat and heat the oil until just smoking. Whisk in flour, a little at a time and cook, whisking constantly, until roux becomes smooth and thick. Continue to cook, constantly stirring with a wooden spoon and reaching all over bottom of pan, until roux darkens to desired color. Be careful not to produce specs of black. The roux must remain an even color throughout process. If specs appear you must start over.
For a Light Brown Roux, cook the mixture, over medium heat for 1 1/2 hours, or until the color of peanut butter. Remove about 1 cup of the light colored roux, cool completely, and set aside for the Delmonico's Seafood Okra Gumbo.
For a Medium Brown Roux, cook the mixture, over medium heat for an additional 30 minutes, or until the color of a copper penny when ready. Remove about 13/4 cups of the medium colored roux, cool completely, and set aside for Emeril's Country File Gumbo.
For a Dark Brown Roux, cook the mixture an additional 35 to 45 minutes. The color should resemble dark chocolate when ready. Remove all of the remaining dark roux from the pan and cool completely. Set aside for the Chicken and Sausage Gumbo.
Yield: about 4 1/2 cups roux
NOTE: The timings for various shades of roux will vary depending on the cooktop as well as the amount of roux made. (A smaller amount will cook in much less time.) If this is your first time making a roux, the slower you cook it, the less likely you will be to burn it. The important thing is to cook the roux to the desired color, as specified above.

Beer. Just beer. Goes great with it.
The hardest part is making the roux. it's just oil and flour, but it takes time to do it right. You have to keep stirring it. And for this recipe you want it to be the color of a Hershey bar. It'll start off the color of light peanut butter. If you do that right it'll be perfect.

I made gumbo last night. It was like real ass gumbo too! Taste just like some authentic gumbo made by some dude you can't understand. I'm gonna get pics up tonight or tomorrow.
I freaking love gumbo! i made some from scratch a few months ago. I think it turned out ok since i used Chorizo instead of anduille...places dont carry it here. Anyways its really easy and sticks to the friggin ribs.

gotta say wolfgang puck makes a nice canned tomato soup
but my grilled cheese just doesn't soak up the soup the way i dream it should. perhaps i should invest in a loaf of thicker cut bread, or perhaps unsliced bread? with regular slices i feel i should almost make two sandwiches but that'd be too much

I got some wings and soaked them in wing sauce since 9am. Threw em on the grill at 6 and let them go steady cookin for an hour. Then I basted em again and put em over the open huge flame for a bout a min each side to get some crispyness to the outside.
Then watched the Capitals game and ate em. They were delicious with my labatt blue light.

Sunday it actually warmed up to 50 degrees here in the arctic midwest (warmest it's been since november at least). So I busted out the grill and grilled up a juicy, two inch thick 25 oz. t-bone. Seasoned it with just some salt, pepper, and a smearing of roasted garlic. Wife made some twice-baked potatoes and pan-seared some fresh green beans. mmmm it was so good. Haven't been able to grill for months. (and therefore, haven't had a steak in months. Steak has to be fresh grilled on a charcoal grill or it's not worth it)

well if i am not spending my money on bills/car its on beer. so my deit is cheap
white rice, peas, and corn. than with ground beef and some soya sauce. ummm so good
or my spaghetti. basically noddles and lots of tomato sauce and beef. my friends love it. with some cheese on top
shrimp alferdo - just your typical shrip you get at the super market, heat the shrip up till they are cooked ( i like mine a bit chrunchy so slightly brown) than add the alferdo sauce and serve over a chicken flavored rice
salmon and rice, everyone know how to make this. but i like a sweet sauce on mine
than lemon pepper cod with potato's. ummm yummy

I am actually not filipino, I'm whiter than freshly fallen snow, but I simply need longanisa to survive, at least once every couple weeks. I eat them with steamed rice, fried egg, furikake, and tsukemono.
I've never even heard of pozole before, I'll have to get on that. I did a veal piccata the other day and some seared mahi mahi just before that.
