I always hear red cars are the worst to paint, but if you sand everything down why would it make a difference? Someone even told me that as the paint gets old (years) you'll start to see red coming from underneath.

you need to put enough coats on... if you get a shitty paint job from like maaco or something, like 2 coats yea... you need at least 5 coats... but thats how and paint job should be if you want it to look good.

just use primer sealer and u shouldnt have any problems with the paint bleeding through.

I painted a red car over in black. As long as you prep and primer it right its no different. Pics of the car are in my album

Use a sealer before shooting the base. It will not only provide a uniform base (usually a lighter shade as well) which will make it easier to cover, it will also prevent bleed-thru of the old pigment.
Shouldn't take more than three coats of base to cover the colour if the paint is decent, and mixed properly (and applied properly).

better make sure to sand the majority of that red off.
i dont care what anyone here says, when you get a paint chip and the clear/base/primer chip off (because its not as durable as OE paint application process) you'll be the tool with red chips showing underneath the fancy paint.
pay someone to do the labor and sand down the old paint as much as possible. hence the reason this "maaco" shit is just retarded, because it takes a lot of labor to sand off paint, especially SHIT maaco paint. atleast if you have oem paint, you know what to expect in terms of thickness of the paint. but when you have layer after layer of crap, the only solution is having the shell media blasted down to the metal again.

^Do it right or have the Kool aid man busting thru your paint. Take the paint down to metal. laying any paint on top of your old paint especially when its 2 diff colors will only mean a weak shell of color that will crack and flake off with the easiest of hits.

Just sand it really good. I dont think you need to take it all the way down to the metal just sand it really good so your primer sealer will stick and you should be fine.

is it as bad if you are painting the car a red again? ei, my car is the wine red color for s13s, but I plan on painting inferno red crystal pearl coat from the 07 chargers.

Just scuff the paint you have now enough so the primer can stick good and then repaint. once you primer it no color is coming thru
