what would the ecu do if i disconnected the oil pressure sender and put my own in its place, would the ecu go nuts?  Are there any sideffects?

Don't do it.  First of all, what engine do you have?  I installed both these gauges (electric) on my SR20.  Here's how:

For the oil pressure:
You really should use the stock pressure sender.  Go and find a tee that the aftermarket sender will fit into.  Chances it's a standard size, like 1/8th inch NPT, or something.  Now you will have to find a way to make the stock sender fit as well, which is probably 10mm.  The way you do this is with brake line fittings.  Go to Advance Auto Parts, and ask to browse the fittings.  Find a brake line adapter that has a 10mm female, and a standard male side (preferably 1/8th inch NPT, or whatever the aftermarket sender is).  You'll need to get a little creative, but it can be done.  Lastly, remember to use Teflon Tape on all the threads.  If you don't retain the stock oil pressure sender, you will get a check engine light, or maybe worse.  I don't know.  
Also, if you can't get the new sender to fit on the tee, it's OK to mount it somewhere else and run some stainless steel braided line between it and the tee.  I did.  It works.  

Water temp.  
Mount it somewhere else.  If you can find a bleeder for air in the water line (which you really don't need), or something else in the water outlet, drill it, and tap it according to the thread of the new sender.  Just make sure to mount it BEFORE the radiator, or else you will get a low reading.  Again, use Teflon tape around all threads.
