This site http://www.autobrakeworks.com/ makes a caliper bracket that allows your to run a z32 caliper with a 350z track rotor on your 240sx. on the main page of the website is a video of their CNC process, but in the end of the video there is a still image of the bracket installed and to me it looks like the pad isnt completely "flush" with the rotor it looks like there is a small gap and the bottom. and it also looks like the pad might sit a little past the end of the rotor. here is a pic of what I mean...

Does this seem right?
It looks like the pad wont make 100% surface contact with the rotor, am I wrong?

you are sticking a bigger rotor with a stock caliper.. that looks perfectly right. the caliper is made for use with the z32 rotor. anything bigger and it will not touch the entire surface.

bigger diameter rotor = more clamping torque
bigger diameter rotor = better heat dissipation
doesn't matter if part of the rotor isn't being used, it'll still make a difference in braking power

with the spl adaptors, were the brakes still effective?
