when someone chooses to put an engine from a random car into a car its not specific for, is the only way to get the new engine to work with the gauges inside to have a standalone? why couldn't I just swap the gauges? to be more specific lets say hypatheticaly I wanted to put an ls1 into a 240.. why can't I just use the ls1 ecu? and put in the ls gauges the whole nine yards..if this makes any sense

Nothing is stopping you.
But you still need to make sure you have the speed sensor from the t-56 or whichever one you go with.

you can just use the same ecu that was used in the swapped car, but when it comes time to modify the engine your going to want to go with a stand alone so that you can change air/fuel ratio and ETC.

There's quite a few ways to go about this swap. Many of the 240SX gauges work on their own, so you could use an LS1 ECU for the engine control and put the 240SX gauge sending units on the engine. The tachometer would be the biggest hurdle as it's set up for a four banger, but the rest of the gauges shouldn't be much of an issue as long as you can feed them the signals they're expecting.
